Freezing Eggs: Here's How

Raw eggs can be frozen without any problems - if you keep a few things in mind. But even boiled eggs keep well in the freezer with the right preparation.

Egg yolks and whites can be kept covered in the refrigerator for about three days. Alternatively, you can also freeze the egg mixture. So that it doesn't gel when it cools down, you should whisk it carefully beforehand and - depending on how it will be used later - mix it with a little sugar and salt, advises the “Too good for the bin” initiative. Suitable containers are, for example, Tupperware or muffin trays and ice cube containers.

Freeze eggs in their shells?

Whole raw eggs do not belong in the freezer. Since liquid expands when it freezes, the shell would otherwise burst. Raw egg whites and yolks can be frozen together or separately. If both are frozen together, the egg mixture can be kept in the freezer for between 8 and 10 months. Protein lasts for 10 to 12 months at minus 18 degrees. If you only want to freeze protein, you can do without adding salt or sugar.

Freezing hard-boiled eggs?

This is possible, but it is not recommended. At the low temperatures, the protective shell tears, and the taste and consistency also change. The egg white becomes rubbery, tough and tastes watery. There are usually no problems with the yolks - if you prepare them properly. Carefully place hard-boiled egg yolks side by side in a saucepan and cover with water. Bring to the boil quickly, remove from the heat and leave to stand for 10 to 15 minutes with the lid closed. Drain well and freeze.

Expiry date exceeded: throw away the egg?

If the best-before date has passed, eggs don't have to be thrown in the trash straight away. If they are heated to more than 70 degrees, so that the yolks and whites coagulate, they can still be used for cooking or baking, the experts explain.

Store eggs with the pointed end down

Eggs can be kept for 28 days from the date of laying - provided they are stored correctly. The Federal Agency for Agriculture and Food explains how it's done. more
